I have a very tasty and incredibly versatile combination of Winter Bread Cake Stollen Pudding found! This sweet potato bread is all at once. Especially great (I'm so often drank from sweet often quickly): You can combine it sweet and hearty. Today I felt like a fresh counterbalance to the wintry note and topped the bread with quark and fresh passion fruit. Great for breakfast!
Spread with red pesto and served with a small salad, the bread becomes an extraordinary appetizer. But more like a dessert? Then the bread cuddles very happy with a scoop of ice cream and some compote.

This Sweet Potato Bread combines all the nice flavors and textures of one likes in the cold time of the year. And it's delicious on so many different occasions, you can serve it with sweet as well as salty spreads and sides. Today I want something fresh and fruity on my sweet potato bread: curd cheese with passion fruit. It's marvelous for breakfast!
But try it with red pesto and a green salad as a starter. You are more into desserts? Just serve it with a scoop of ice cream and stewed fruit.
There are lots of combinations possible.
Here's how it works:
500 g sweet potatoes Peel, cut into small pieces and cook for about 15 minutes in water . Then drain, allow to cool slightly and crush to puree.
Preheat the oven to 180 degrees.60 grams of soft butter (Vegans take margarine) 120 g brown raw cane sugar and 1 egg (or egg substitutes) stir very smoothly. 100 ml maple syrup , 1 teaspoon cinnamon , 1/2 teaspoon salt , the Mark 1 vanilla pod or 1/4 teaspoon ground vanilla Add and stir until smooth. Finely grate 10 g fresh ginger and stir with 3 tablespoons milk (or soy milk) and the sweet potato puree. 300 g spelled flour Mix with 3 level teaspoon baking powder and gradually stir into the sweet potato mass. Chop and fold under the dough. I diced 1/2 pear and added it to the dough. As a result, the bread remains very moist and after baking has a snug consistency. For those who prefer a drier finish, put the pears away or use dried fruit.
Place the dough in a greased tin box or silicone mold and bake for 50-60 minutes at 180 degrees .
Recipe for one loaf Sweet Potato Bread:

Preheat the oven to 180 degrees.
Mix 60g soft butter with 120 brown sugar and 1 egg until dissolved. Add 100 ml maple syrup , 1 tsp. cinnamon , 1/2 tsp. salt , 1/4 tsp. ground vanilla bean. Stir well untilcombined.
Fold 10 g grated fresh ginger, 3 tablespoons milk, 100 g chopped walnuts, 300 g spelled f lour, 3 tsp. baking powder and the sweet potato puree into the mixture.
Pour the dough into a greased loaf pan and bake for 50 - 60 minutes.
